I first met Damian in June 2016 at The Truffle Farm. Back then he was about to start his next chef-venture Otis. In 2017 he was awarded Chef of the Year, by the Australian Hotels Association (AHA) National Awards for Excellence, and this year Otis has well-earned a Chefs hat.


Damian just might be one of the hardest working Chefs in the ACT. Not only is he Executive Chef at Otis and The Truffle Farm, he is also flipping truffle burgers for Funguys.


We caught up with the Damian for this weeks #MCM


What's your nickname? DB. Usually Chef, although I'm not sure it counts as a nickname, if you're a doctor I guess doctor isn't your nickname after all.


If you had a warning label, what would yours say?

DB. Do not use as a floatation device.


If you could travel anywhere tomorrow, where would you go? DB. India, I love Indian cuisine, particularly traditional curries.


If you were a woman for a day, what's one thing you would you do? DB. Cook food, same as I do everyday, but perhaps I would be better at cooking more than one thing at a time.


If you got stuck in an elevator and were forced to listen to only one song, what would it be? DB. We've got to get out of this place.... it would be funny at first, but I guess it wouldn't be for long.


What weird food combination do you enjoy? DB. Blue cheese and kimchi, in a toasted sandwich, it's amazing!


If you had visitors, what Canberra attraction would you say can't be missed? DB. The Truffle Farm during truffle season.


Where do you go for your favourite meal in Canberra? DB. Besides OTIS I would say RAKU and Zaab. Both are authentic and created by passionate people.


What is one thing that irritates you about Canberra? DB. Bad drivers, seriously some days it seems like there is a bad driver convention on.


What's your favourite getaway within the surrounding region? DB. Batemans Bay. I love fish and chips, and being from a costal town, I believe they should only be eaten where you can see water and sand.


What's the last event you attended in Canberra? DB. Truffle Degustation at The National Arboretum, I attended in the form of cooking food.
